This is an inspired adaptation, not a traditional Cajun dish. It borrows the building blocks of Louisiana Cajun cooking — smoky andouille-style sausage, the 'holy trinity' of bell pepper, onion, and celery, and a warm cayenne-forward spice blend — and reworks them into an Italian-American-style baked ziti. How this differs: classic Cajun dishes like jambalaya or gumbo are built on rice or a roux, not baked pasta with mozzarella; we adapt the flavor base into a ziti bake rather than reproduce those dishes.

What if I can't find andouille?
Any smoked pork sausage works; add a little extra smoked paprika and cayenne to approach the andouille profile.

No. Jambalaya is a rice dish; this borrows the trinity and smoked-sausage flavors in a baked pasta and is not that dish.
