This is an inspired adaptation, not a traditional Sicilian dish. Pasta alla Norma is a classic Sicilian pasta — typically short pasta with fried eggplant, tomato sauce, basil, and grated ricotta salata, served fresh rather than baked. Here we borrow those flavor cues and rework them into an Italian-American-style baked ziti. How this differs: alla Norma is not a casserole and does not include the layered mozzarella of a baked ziti; we adapt its ingredients rather than reproduce the dish, and we roast the eggplant instead of frying it.

Directions

    Salt the eggplant cubes and let them drain in a colander 20 minutes; pat dry. Heat oven to 400°F (200°C).
