This is an inspired adaptation, not a traditional Jamaican dish. Jerk is a Jamaican preparation built on Scotch bonnet chile, allspice (pimento), thyme, scallion, and warm spices, traditionally used to marinate and grill or smoke meat. Here we borrow the jerk seasoning profile for the chicken and fold it into an Italian-American-style baked ziti. How this differs: traditional jerk is grilled or smoked over pimento wood, not baked into a cheesy pasta casserole; we use the spice cue on oven-cooked chicken and pair it with tomato and cheese, which is not part of jerk cookery.
